Grandmother’s cure for everything. When you were sick, sad, or cold, a bowl of this golden elixir appeared. Now science confirms what grandmothers always knew — this broth heals, nourishes, and restores.
What You’ll Need
Ingredients
- 1 whole chicken carcass (or 2-3 lbs chicken backs, necks, and feet)
- 2 tablespoons apple cider vinegar
- 1 onion, halved
- 3 carrots, roughly chopped
- 3 celery stalks
- 4 garlic cloves
- Fresh parsley, thyme, bay leaves
- 1 teaspoon peppercorns
- Filtered water to cover
Instructions
- Place chicken bones in pot. Cover with cold water, add vinegar. Rest 30 minutes.
- Add all vegetables and herbs. Bring to a boil.
- Skim any foam from the surface during the first 20 minutes.
- Reduce to the lowest possible simmer. Cook 6-12 hours.
- Strain through a fine mesh strainer. Taste and add salt if desired.
- Cool and store in fridge for 5 days or freeze for 3 months.
Grandma’s Tip
Chicken feet make the most gelatinous broth you’ve ever seen! Ask your butcher — they’re inexpensive and transform ordinary broth into liquid gold that sets firm like jello when chilled.
Gut Health Benefits
Chicken broth contains glycosaminoglycans, collagen, and glutamine — all essential for rebuilding gut lining cells and reducing intestinal permeability (leaky gut).
