Beet Kvass

This deep ruby-red tonic drink from Eastern European tradition is one of the most powerful liver cleansers and blood builders I know. Just beets, salt, and water — but the magic that happens in that jar is extraordinary.

What You’ll Need

Ingredients

  • 3 medium beets, peeled and chopped into 1-inch cubes
  • 1 tablespoon sea salt
  • Filtered water to fill the jar
  • 1 quart mason jar

Instructions

  1. Peel and chop beets into 1-inch cubes — do not grate or juice them.
  2. Place beet chunks in a clean quart mason jar.
  3. Dissolve salt in 2 cups of filtered water to make your brine.
  4. Pour brine over beets, then add more water to fill the jar, leaving 1 inch of headspace.
  5. Cover with a cloth and leave at room temperature for 2-5 days.
  6. Strain and refrigerate. Drink 4 oz in the morning on an empty stomach.

Grandma’s Tip

Never grate the beets — big chunks are the old-fashioned way, and the old ways are best! Grating makes the kvass too sugary and prone to alcohol fermentation.
