What You’ll Need
- 💧 Water kefir grains — dairy-free probiotic starter
- 🍾 Swing-top glass bottles — for the second ferment
Ingredients
- 1/4 cup water kefir grains
- 4 cups filtered water
- 1/4 cup organic cane sugar
- 1/4 cup fresh lemon juice
- Lemon slices for the second ferment
Instructions
- Dissolve sugar in 1/2 cup warm water. Let cool completely.
- Pour sugar water into a quart jar and add remaining filtered water.
- Add water kefir grains. Cover with cloth and ferment 24-48 hours at room temperature.
- Strain out grains. Add fresh lemon juice and lemon slices.
- For fizzy drink, bottle tightly and leave at room temperature 12-24 hours (second ferment).
- Refrigerate and enjoy cold.
