Water Kefir Lemonade

A sparkling, probiotic-rich drink that tastes like a fizzy lemonade but feeds your gut with billions of beneficial bacteria. This is how we made children love their probiotics before pills were invented!

What You’ll Need

Ingredients

  • 1/4 cup water kefir grains
  • 4 cups filtered water
  • 1/4 cup organic cane sugar
  • 1/4 cup fresh lemon juice
  • Lemon slices for the second ferment

Instructions

  1. Dissolve sugar in 1/2 cup warm water. Let cool completely.
  2. Pour sugar water into a quart jar and add remaining filtered water.
  3. Add water kefir grains. Cover with cloth and ferment 24-48 hours at room temperature.
  4. Strain out grains. Add fresh lemon juice and lemon slices.
  5. For fizzy drink, bottle tightly and leave at room temperature 12-24 hours (second ferment).
  6. Refrigerate and enjoy cold.
